Here's my go-to recipe for a Lite Microwave Bread Pudding. An instant, warm, soft and rich bowl of goodness that's ready in less than 10 minutes.

Chop the bread into ½ inch squared pieces and divide between 2 ramekins along with mix-ins, if using.
In small bowl, whisk egg whites until foamy, then add milk, vanilla, sweetener and spices.
Pour egg mixture over bread.
Let it stand for about 5 minutes until the milk is well absorbed.
Microwave on high for about 1½ minute or until a toothpick inserted into center comes out comes out dry.
Serve warm with your choice of topping!
