Beautiful Blood Orange Protein Cake for one made with a ton of protein powder and egg whites! This healthy blood orange mug cake is just like the upside down cake, but actually easy and has no sugar either.

Preheat oven to 350°F and lightly grease a 1 cup ramekin.
In a bowl, combine melted butter and brown sugar.
Spread on bottom of ramekin.
Remove skin from blood orange slices and place on bottom of ramekin.
In a bowl, whisk vanilla protein powder, coconut flour, blood orange zest and baking powder.
Add egg white, milk and vanilla, and stir until combined. Batter should be smooth and thick.
Taste batter and add sweetener if needed.
Pour batter into ramekin, bake for 15-17 minutes.
Top should be set.
Let cool.
