Unbelievably good Chocolate Biscoff Protein Bars with layers of chocolate and speculoos cookie with protein powder. These healthy chocolate biscoff bars are low fat, low calorie and low sugar too - a great homemade protein bar recipe.

Chocolate Layer:
In a bowl mix chocolate protein powder, cocoa powder, oar flour, coconut flour and almond milk.
Taste mixture and add sweetener if needed.
Add crushed biscoff cookie and mix.
Mixture should be thick, but handle-able; Add milk if the mix is too dry or coconut flour if the mix is too wet.
Divide into 6 portions.
Biscoff Layer:
Place biscoff cookies in a food processor and process until crumbled (or crush in a zipper bag with rolling pin).
In a bowl, mix crushed biscoff, vanilla protein powder, unflavored protein powder, coconut flour and almond milk.
Add milk if the mix is too dry or coconut flour if the mix is too wet.
Divide into 6 portions.
Assemble:
Grease the insides of a 6-cup muffin pan (or line with parchment and grease); Or spread into a loaf pan.
Place a chocolate mixture ball into muffin cavities and press down.
Smoothen with back of spoon or small spatula.
Place bicoff mixture on top; Press down and smoothen.
Transfer pan to freeer for about 20 min to harden.
Chocolate Topping:
Place the chocolate chips and coconut oil in a shallow bowl and microwave for about 45 seconds - at 20 second intervals - until it’s completely melted. Let cool about 5 mins.
Run a sharp knife along sides of cups and remove each one.
Use spoon to spread and drizzle melted chocolate on each cup.
