Chocolate Collagen Baked Oatmeal

Delicious, nutritious Chocolate Collagen Baked Oatmeal to start your day. Easy, high protein baked oats made with chocolate collagen protein powder, and packed with fiber to keep you satisfied till lunchtime.
Preheat oven to 350°F, and lightly grease a 9”x6” baking dish (or use an 8”x8” and reduce baking time).
In a large bowl, combine all the wet ingredients - Greek yogurt, applesauce, almond milk, egg whites and vanilla. Whisk together.
Add in dry ingredients - oats, collagen protein powder, cocoa powder, baking powder, and sweetener.
Whisk again.
Add most chocolate chips, and whisk.
Pour mixture into prepared dish and flatten with back of a spoon or spatula.
Top with more chocolate chips.
Bake for 22-25 minutes until center is just set. The top will be slightly wet in the middle, but that’s expected. Tester knife inserted into middle should come out slightly moist.
Cooking longer will make the oats dry on the inside.
Let cool for about 15-20 minutes.
Slice into bars, and enjoy!
