Chunky Monkey Protein Cake - Low Fat, Sugar Free

Chunky Monkey Protein Cake is better than your favorite ice cream! With mashed banana in the cake, peanut butter powder, walnuts and sugar free chocolate, this high protein chunky monkey cake is healthy, low fat and added sugar free!
Preheat oven to 350°F and line a 8” cake pan with parchment paper.
In a bowl, whisk flour, vanilla and unflavored protein powders, peanut butter powder and baking soda.
In a large bowl, whisk together hot water, mashed banana, butter, lemon juice and vanilla.
Add dry mix to wet, whisk lightly for 7-8s and then gently fold until just combined.
DO NOT OVER-MIX or protein powder will make the cake dense.
Add most chopped walnuts and chocolate (reserve few for top) and fold.
Pour batter into pan, top with remaining nuts and chocolate.
Bake for 22-25 minutes; Don’t let the batter sit out.
A tester inserted into the center should come out clean and center of cake springy to touch.
Let cool in pan for 10 minutes then transfer to a cooling rack to cool completely.
