Preheat waffle iron.
In a bowl, whisk pancake mix, liquid egg substitute (or egg) and milk.
Spray waffle iron with cooking oil spray.
Scoop out 1-2Tablespoon-fuls batter into waffle iron, leaving gaps.
Cook for 4-5 minutes.
Remove from waffle from iron and repeat with remaining batter, greasing each time.
Cinnamon Sugar Coating:
In a bowl, combine granulated sweetener and cinnamon.
Brush warm waffles with melted butter, place in cinnamon-sugar mix, toss to coat.
Chocolate Sauce:
In a bowl, whisk protein powder, cocoa powder, almond butter and water.
