Perfectly crispy like a bag of potato chips, these Baked Zucchini Chips are actually good-for-you! A great alternative for a healthier, low-carb lifestyle.

Preheat oven to 235°F.
Thinly and evenly slice the zucchini with a knife or mandolin to ⅛” thickness.
Transfer slices to a large bowl, add oil and seasonings, and stir until properly coated.
Place the zucchini slices on the prepared baking sheets.
Bake for about 2 hours until crisp and golden. If some chips are still damp, remove the crisp ones and place the damp chips back in the oven for a few more minutes.
Remove and allow to cool on a paper towel.
Serve immediately or store for later.
