Crispy Creamy Spinach and Cheese Quesadilla (Low Carb)

Crispy tortillas filled with gooey molten goodness. This Crispy Cheesy Spinach Quesadilla has a melty delicious combo on the inside that does some pretty good justice to the crisp on the outside. Hard to stop at just one!
Heat oil in a large non-stick skillet on medium-high and fry onions until translucent.
Add the garlic, jalapeño and spinach and cook until the spinach is wilted, around 2 minutes. Remove from heat and set aside.
Place one tortilla on the skillet, cook one side until lightly browned and set aside.
Place second tortilla on skillet, and flip when one side is lightly browned.
Top with spinach mixture and cheese, and cover with cooked side of other tortilla.
Cook for about 3 minutes until bottom tortilla starts to crisp, and flip over.
Similarly cook other side and slide onto cutting board when done.
Cut into wedges and serve!
