Decadent Dark Chocolate Brownie Oatmeal made with cacao powder for a rich flavor and Cauliflower for added volume. This delicious, easy and healthy dark chocolate oats is pure breakfast indulgence!

¼ cupSteel Cut OatsDry, 60g, or 1⅓ cup cooked: 312g

⅔ cupWater

1 cupsCauliflower Rice140g

2 TbspCacao Powder or Unsweetened Cocoa

⅔ TbspPure Vanilla Extract

Stevia Sweetener2 Tbsp + 2 tsp sugar worth (Use your brand's Conversion Chart)

2 ⅓ TbspAlmond Milkor Water

Optional:

⅔ scoopUnflavored Collagen

Cook Oats:
Bring water to boil in a saucepan.
Stir in the oats and bring to a boil again.
Cover with a lid, reduce heat to a low simmer, and let cook 20 minutes (or longer if needed) until soft and creamy. Stir occasionally to avoid sticking.
If oats get too thick, add water to thin it out.

Assemble:

Place cauliflower rice in a bowl and microwave on high for 1½ minutes until tender.
In a large bowl, add cooked oats, cauliflower rice, cacao powder or cocoa, vanilla extract, stevia sweetener, and optional collagen powder.
Pour in about 3-4 Tbsp almond milk or water and stir to combine. Add more water if needed.
Reheat in microwave if too cold, top with all your favorites and serve hot!
