Easy Tender Grilled Octopus

Here’s a recipe for a charred, Grilled Octopus drizzled with olive oil to take it to perfection! Tender and soft white meat that really absorbs all those delicious flavors, and will be your dinner 2 nights in a row!
Place octopus in a large pot over medium heat and cover with water.
Bring to a boil, then reduce heat to a low simmer, cover and cook for 25 minutes or until octopus is tender but still firm (tip of a sharp knife should slide in easily).
Drain and set aside to cool until ready to handle, about 15 minutes.
Preheat grill to medium high, about 450°F.
Transfer octopus to a bowl, add 1 tsp olive oil, lemon juice, garlic and seasonings and toss to combine.
Grill each side for about 2-3 minutes until charred.
Slice into ½ - ¾" thick rounds and arrange on a platter.
Drizzle ½ tsp olive oil, garnish with parsley and serve!
