Preheat oven to 350°F and line a baking sheet with parchment paper.
Place oats in a small food processor and process until it gets a rough flour-like consistency.
Combine all ingredients in a bowl: Nutella, Oats, (whisked) Egg and Baking Soda.
Scoop out about 2 Tbsp mixture at a time, roll (use slightly damp palms), flatten or shape as desired (cookies will not spread) and place on prepared baking sheet.
Bake for 10 min. Let rest on pan for about 5 minutes to firm up. Transfer to wire rack to cool completely.
