These Roasted Breakfast Potatoes are so much better than that greasy stuff you get at a restaurant, and so easy, you're gonna have to try hard to mess it up!

Preheat the oven to 425°F.
Dice the potatoes into ½ inch size cubes.
In a large bowl, toss all the ingredients together until vegetables are evenly coated with oil and spices.
Spread the mix evenly on a baking sheet lined with parchment paper bake for 30-40 minutes until potatoes are crisp and brown, shaking the pan halfway.
Sprinkle with some salt and pepper and serve hot!
