Healthy Peach Crumb Bars - a delightful balance between indulgence and nourishment. With oats, protein powder and egg white these peach crumble bars are high protein, low fat, and added sugar free!

Line a 8 x 4” loaf pan with parchment paper; leave an overhang to lift out later.
Preheat oven to 350°F.
Prep Peaches:
In a bowl, toss together sliced peaches, brown sugar, cornstarch, cinnamon and lemon juice.
Let sit 2-3 minutes.
Base & Crumb:
In a bowl, combine rolled oats, vanilla protein powder, unflavored protein powder, flour and cinnamon.
Place in small food processor, add chopped cold butter and blitz until just combined and crumbly.
Do not over-process or butter will get warm and melt.
Transfer to bowl.
Add in applesauce and egg white and mix. Mixture will be like a dough.
Assemble & Bake:
Transfer to ¾ mixture into prepared pan and press down.
Arrange peaches on top.
Spread remaining ¼ oat mixture chunks on top, and press down.
Bake for 20-25 minutes (cover with foil after 20 minutes) until slightly hardened.
Allow to cool completely, about 30 minutes.
Lift layers out of pan, place on cutting board and using a sharp knife, slice into 8 bars.
