Blanch and peel the pistachios: Boil about 2 cups water in a small pot. Add pistachios and blanch for about 30 seconds.
Drain and rinse with cold water.
Peel off the skins by rubbing them in a kitchen towel.
Place pistachios in food processor or blender and process until crumbled.
Add protein powder and milk (start with about half) and process until smooth.
Optional: Add matcha powder for the bright green color and earthy taste.
Blend to get the desired consistency.
Add more or less milk as needed to make it thinner or thicker.
