Preheat oven to 350°F and grease or line an 8” x 4” loaf pan with parchment paper.
In a large bowl, whisk protein powder, flour, sweetener, lemon zest and baking powder.
Add in yogurt, applesauce, almond milk and cashew/almond butter.
If using vanilla protein powder, also add in the lemon juice, and reduce milk to 1 Tbsp.
Gently whisk until just combined.
Add blueberries to batter and fold to combine.
Transfer batter to baking pan and spread evenly.
Bake for about 34-40 minutes.
Top should be set and toothpick inserted into the center should come out clean.
Let cool in pan for 15 minutes, then transfer to cooling rack to cool completely.
Slice into 8 bars.
