Lemon Blueberry Protein Sweet Rolls

Refreshing and gooey Lemon Blueberry Protein Sweet Rolls with no sugar added. These healthy blueberry sweet rolls use protein powder and Greek yogurt and make a great meal prep breakfast or post workout treat.

Preheat oven to 350°F and lightly grease baking pan, or line with parchment paper.
In a large bowl, mix flour, unflavored protein powder, vanilla protein powder and baking powder.
Add Greek Yogurt, lemon juice and lemon zest and mix with large spoon to form dough ball; Stop as soon as ball forms.
Transfer to lightly floured surface and knead to ball - about 10-15 seconds; Don’t over-knead.
Jam:
Heat berries and water in a small saucepan over medium, stirring occasionally until fruit begins to break down and bubble, about 7-10 min.
Use a spoon or potato masher to mash to desired consistency.
Remove from heat, stir in protein powder and let cool (place in fridge).
Make and Bake:
Transfer dough to lightly floured work surface and roll out a long rectangle ⅓-½” thick. (about 16”x 6-8”).
Flour rolling pin to avoid sticking.
Spread softened butter over dough.
Then spread jam and crushed berries.
Gently but tightly roll up dough from the long 16” end until it meets the other end.
Cut log into 8 pieces (about 2” thick each) using a sharp knife or pizza cutter.
Place rolls in pan, leaving a little gap if you like.
Bake for 35-40 minutes until edges puff up and are lightly browned.
Let cool for about 10 minutes.
Frosting:
In a small bowl mix softened cream cheese, milk and protein powder until smooth.
Spread over rolls and serve!
