A big single serve Copycat Levain Bakery Protein Cookie made healthy with oat flour, protein powder and no sugar or butter. This homemade inspired Levain cookie recipe is gluten free, sugar free and Vegan too!

Combine all the ingredients except the mix-ins in a bowl - oat flour, protein powder, unflavored collagen, peanut butter powder, zero calorie sweetener, baking powder, Greek yogurt and almond milk.
Add in chocolate chips and walnuts and mix.
Cover with plastic wrap and place in fridge to chill for 45 mins-1hr.
Preheat oven to 410°F and line a baking sheet with parchment paper.
Transfer cookie mixture onto baking sheet into a large cookie-shaped clump.
Bake about 10 minutes - top should be lightly golden and dry to touch.
Let cool for a few minutes and enjoy!
