Milk and Cereal Protein Bars

Pretty and tasty Milk and Cereal Protein Bars for a low calorie, low fat, high protein breakfast, snack or post-workout treat. This healthy milk n cereal bars recipe uses protein powder and low sugar cereal and a ton of greek yogurt for those layers!

Line a 7x5” pan or small loaf pan with parchment paper; Leave an overhang to lift out later.
Base:
In a bowl combine crushed ceral, coconut flour, unflavored protein powder and vanilla protein powder.
Add in nut butter and milk (a little at a time) and mix. Mixture will be like a dough.
Add more milk if too dry, coconut flour if too wet.
Transfer to pan and press down.
Protein 'Milk':
In a bowl, mix vanilla protein powder, yogurt and coconut flour until smooth.
Mixture should be thick like a dough.
Add milk if too thick, coconut flour if too thin.
Break into large chunks, spread on top of base and use slightly wet fingers to smoothen.
Chocolate Topping:
Place chocolate chips and coconut oil in a large microwave safe bowl and microwave about 45 seconds, stirring halfway, until completely melted.
Spread chocolate on bar and use back of spoon to smoothen.
Add crushed cereal on top.
Let harden.
Lift layers out of pan, place on cutting board and using a warmed sharp knife, slice into 6 bars.
