Mini Beef & Broccoli Breakfast Sausage Patties

Ditch the store-bought sausages and try these Mini Breakfast Sausage Patties to jazz up your homemade brunch. Made with lean ground beef, they’re higher in protein and a low in saturated animal fat too.
Pulse broccoli in a food processor and until finely ground into “rice” form.
Combine all the ingredients thoroughly in a medium sized bowl, using hands if needed.
Divide mixture into 6 and shape into patties with hands.
Heat a non-stick skillet over medium low heat, lightly grease with cooking spray, and cook until brown, about 5 minutes per side.
Serve as part of a classic brunch platter with some fried eggs, breakfast potatoes and slice of toast!
