Mini Egg Protein Blondies - No Butter, Easy, Healthy

Mini Egg Protein Blondies so good you won’t believe they have no butter or extra sugar. Healthy Cadbury mini egg blondies use protein powder and a ton of Greek yogurt for a real great Easter recipe.
Preheat oven to 350°F and line an 8” x 8” baking pan or baking dish with parchment paper.
In a bowl, whisk vanilla protein powders, almond butter powder, unflavored protein powder, flour, brown sugar replacement and baking soda.
In a large bowl, whisk together Greek yogurt, almond milk, almond butter and vanilla.
Add dry mix to wet, and gently fold until just combined.
DO NOT OVER-MIX or protein powder will make the blondies dense.
Add in most of the chopped mini eggs and fold.
Batter should be thick.
Top with more mini eggs, transfer batter into pan, smoothen with a spatula or back of spoon.
Bake for 25-27 minutes or until the top is set. Toothpick inserted into the center should come out slightly damp.
Remove from oven and let cool completely.
Cut into slices and enjoy!
