This No Bake Mini Protein Cheesecake with Greek yogurt and reduced fat cream cheese for an easy and healthy cheesecake recipe. No bake protein powder cheesecake bites are great for a portion control dessert or entertaining guests too.

Line an 8-cup muffin pan with cupcake liners.
Crust:
In a bowl, combine crushed graham crackers, almond butter, maple syrup.
Divide mixture among cupcake liners and press down.
Cheesecake:
If cream cheese is solid, place in a bowl and microwave for about 15 seconds to soften.
Place cream cheese in a bowl and whisk with a wire whisk or hand mixer (alternatively use a small food processor) until light and airy; About 30-45 seconds.
Add Greek Yogurt and beat again.
Add protein powder and coconut flour and mix.
Use a spoon to divide the cheesecake batter among muffin cups.
Press down and smoothen tops.
Place in fridge for 1-2 hours, then remove pan and enjoy.
