Protein Birthday Cake - Easy, Healthy and Perfect!

A pretty and pretty perfect Protein Birthday Cake made with whole wheat flour, Greek yogurt and protein powder, and topped with a simple yogurt icing. This Funfetti Protein Cake uses minimal butter, is sugar free and great for a healthy celebration dessert.

Preheat oven to 350°F and line an 8” round cake pan with parchment paper; Spray sides with cooking spray.
In a bowl, combine whole wheat flour, half protein powder, sugar-free sugar replacement, baking powder and baking soda. Set aside.
In a large bowl, beat together butter and half protein powder using an electric hand mixer or paddle attachment until combined.
Add Greek yogurt, milk and egg and beat again.
Microwave 5 seconds if butter hardens.
Add dry mix to wet and fold using a large spoon or spatula.
DO NOT OVER-MIX or the cake will be tough because of the protein powder and gluten from the whole wheat flour.
Pour batter into pan, and bake on center rack for 23 minutes. A tester inserted into the center should come out clean and center of cake springy to touch.
Let cool in pan for 10 minutes then transfer to a cooling rack to cool completely.
Glaze:
In a small bowl, stir Greek yogurt, powdered sugar replacement, almond milk and vanilla.
Spread on cooled cake, and top with sprinkles.
