Superb Protein Cookie Dough Oreos to replace those store-bought versions. Healthy cookie dough Oreo cookies have biscuits and filling made with protein powder instead of sugar for a sugar-free recipe.

Preheat oven to 350°F, line baking sheet with parchment paper..
In a bowl combine oat flour, chocolate protein powder and black cocoa.
Add in almond butter, milk and vanilla and mix to form dough ball.
Add more milk if too dry, oat flour if too wet.
Roll dough into ball using hands.
Place in fridge for about 15 min to chill.
Place parchment paper on work surface, place dough on, cover with another piece of parchment paper.
Use rolling pin and roll into sheet about ⅛” thick.
Use small circle cookie cutter or spice jar lid (about 2” wide) and cut out circles.
Transfer to baking sheet.
Repeat with leftover dough to make 30 circles.
Bake for 8-10 minutes.
Let cool on baking sheet 2-3 minutes; Then transfer to cooling rack to cool and harden.

LET COOKIES COOL FIRST.
In a bowl mix dry ingredients - oat flour, vanilla protein powder, unflavored protein powder, coconut flour and peanut butter powder.
Add in almond milk - a little at a time - and mix.
Add chocolate chips and mix.
Assemble:
Place about 2 tsp filling on one cookie, cover with another cookie and smush down.
