Protein Sticky Toffee Pudding - Lighter, Sugar Free Recipe!

A lighter, skinny, Protein Sticky Toffee Pudding for a real Christmas treat! Healthy sticky date pudding uses protein powder for sweetness and is actually sugar free outside of the dates. Low fat too!

Preheat oven to 350°F and lightly grease a 4 1 cup(8oz) ramekins.
Dates:
Place dates and baking soda in a bowl. Pour boiling water over.
Let stand for 20 minutes.
Chop dates and mix back into water.
Batter:
In a bowl, whisk applesauce and melted butter.
Add vanilla protein powder and brown monkfruit sugar, and whisk again.
Beat in egg, and then date mixture.
In another bowl, mix flour, unflavored protein powder, baking powder, baking soda and salt.
Add dry mix to wet and fold until combined.
Divide batter among ramekins and smoothen top with back of spoon or spatula.
Bake for 18-20 minutes. Tester inserted should come out clean.
Sauce:
In a bowl, combine peanut butter, peanut butter powder, vanilla protein powder, milk and vanilla extract.
Invert pudding onto plate.
Poke holes on top of pudding using skewer, and pour sauce over.
