Perfectly chewy Chocolate Chip Pumpkin Protein Cookies but sugar free and low fat too. These healthy pumpkin spice protein cookies use protein powder for sweetener, and only a little almond butter. Real perfect fall bake!

Preheat oven to 350°F and line a baking sheet with parchment paper.
In a bowl combine vanilla protein powder, peanut butter powder, flour, coconut four, sugar alternative, baking soda and pumpkin pie spice..
In another bowl, place whisk pumpkin puree, egg and almond butter.
Add dry mix into wet and gently fold until uniform.
Add chocolate chips and mix again.
Divide cookie mixture into 8 on baking sheet, and spread with spoon or spatula and shape into cookies (keep 1-2” space).
Bake about 8 minutes - top should be cooked and dry to touch, but still soft.
Transfer to cooling rack to cool completely.
