Pumpkin Spice Crunchy Chickpeas have the warm flavors of your favorite fall dessert, but even more enhanced by the roasting. A fiber-rich addictive snack to add to your list!

Preheat oven to 375°F.
Pat dry the chickpeas with a kitchen towel and remove any loose skins.
Transfer to a large bowl, add oil and toss to coat evenly.
Spread chickpeas on a parchment-lined baking sheet and roast for 35 minutes, mixing halfway.
Transfer to a bowl and while still warm, add maple syrup and spice and toss to coat evenly.
Bake for another 5-7 minutes, remove and let cool.
Serve immediately as a snack, or with a bowl of greek yogurt!
