Banana Protein Blender Pancakes (Gluten Free & Paleo)

    Banana Protein Blender Pancakes are a sweet way to start the day with all the nutrients and no guilt. A low-fat, naturally-sweetened, gluten-free recipe that's also packed with protein and potassium.

    1. In a medium bowl, mash the banana with a fork, then add eggs and vanilla and whisk using a blender or hand blender.

    2. Add the protein powder, sweetener, and baking powder, and blend again.

    3. Heat a nonstick skillet on low, lightly grease, and spoon out about 3 Tbsp mixture on it.

    4. Top with chocolate chips if desired and cook for about 1-2 minutes until edges appear dry, and gently flip over. Cook other side for another minute.

    5. Stack and serve with some extra chocolate chips or pecans!
