Blueberry Protein Pancake Bread - 6-Ingredients, Quick, Heathy!

    An unbelievable Blueberry Protein Pancake Bread made with protein pancake mix, protein powder and just 4 more ingredients! This protein pancake loaf is a healthy quick bread perfect for breakfast, snack or post workout.

    1. Preheat oven to 350°F and line an 8½" x 4½" loaf pan with parchment paper.

    2. In a large bowl, whisk protein pancake mix and protein powder.

    3. Add milk, Greek yogurt and eggs and whisk till just combined.

      Don’t over-mix or loaf will be dense.

      Batter should be fairly thick; Add 1-2 Tbsp water if it’s too thick, or 1 Tbsp more pancake mix if it’s too runny.

    4. Place blueberries (reserve a few for topping) in a bowl, sprinkle with extra pancake mix and toss to coat.

      Required to prevent them from sinking to the bottom.

    5. Add blueberries to batter and fold to combine.

      Do not over-mix.

    6. Transfer batter into pan, smoothen with a spatula or back of spoon and top with remaining blueberries.

    7. Bake for 45-50 minutes. A toothpick inserted into center should come out dry.

    8. Cool for 10 minutes, then remove from pan. Transfer to a wire rack to cool completely.
