Caramel Cashew Protein Bars - Tasty and Good for You

    Chewy and crunchy Caramel Cashew Protein Bars with a high protein base and protein caramel too! A low fat, sugar free and gluten free recipe with caramel flavored cashew butter and peanut butter powder for an extra flavor boost.

    Base:

    Cashew + Caramel:

    1. Line an 8x4” loaf pan with parchment paper; leave an overhang to lift out later.

    2. Combine dry ingredients in a bowl - oat flour, coconut flour, vanilla protein powder, and unflavored protein powder

    3. Add in milk - little at a time - and mix. Mixture will be like a dough.

    4. Transfer to prepared pan and press down.

    Cashew + Caramel:

    1. In the same bowl, stir peanut butter powder, vanilla protein powder, unflavored protein powder.

    2. Add in cashew butter, maple syrup and water (little at a time) until smooth.

    3. Add in chopped cashews.

    4. Spread on top of base and use back of spoon/spatula to smoothen.

    5. Lift layers out of pan, place on cutting board and using a warmed sharp knife, slice into 8 bars.
