    An indulgent single serve Cheesecake Stuffed Red Velvet Protein Cookie - A red velvet protein powder cookie with a protein cheesecake filling. This protein red velvet cheesecake cookie is gluten free, sugar free, has no egg and can be made Vegan too; The perfect protein dessert!

    1. Preheat oven to 350°F and line a baking sheet with parchment paper.

    2. Combine all the ingredients for the cookie in a bowl - oat flour, chocolate protein powder, cocoa powder, peanut butter powder, almond milk, greek yogurt, red food coloring and baking powder. Batter should be thick.

    3. In another bowl, stir together cream cheese, Greek yogurt and vanilla protein powder.

    4. Transfer ½ cookie mixture onto baking sheet, spread with spoon and shape.

      Spread cream cheese filling in the middle, cover with remaining cookie mixture and shape.

      Top with chopped chocolate or chocolate chips.

    5. Bake about 12-13 minutes - top should be cooked and dry to touch.

    6. Let cool for a few minutes and enjoy!
