Chocolate Butterscotch Protein Cookies - Soft, Chewy, Sugar Free!

    Delicious Chocolate Butterscotch Protein Cookies are the perfect balance of soft and chewy and cakey. Healthy cocoa butterscotch chip cookies use protein powder, no butter and sugar-free butterscotch chips too!

    2 servings

    1. Preheat oven to 350°F and line a baking sheet with parchment paper.

    2. In a bowl combine chocolate protein powder, cocoa powder, flour, coconut flour, stevia powder and baking soda.

    3. In another bowl, whisk applesauce and egg.

    4. Add dry mix into wet and gently fold until uniform.

    5. Add most of butterscotch chips and mix again.

    6. Divide mixture into 12, roll into balls and place on baking sheet (keep 2” space between each).

      Slightly flatten into shape and press on more butterscotch chips.

    7. Bake about 7-8 minutes.

      Transfer to cooling rack to cool completely.
