Chocolate Marshmallow Protein Cake - It's like Eating a Drink!

    Ultimate hot cocoa vibes in this Chocolate Marshmallow Protein Cake, but healthy! Chocolate cake with a chocolate frosting and marshmallow topping is low sugar, low fat, low calorie and high protein and is like eating a slice of hot chocolate!

    Chocolate Frosting:

    Marshmallow Topping:

    1. Preheat oven to 350°F and line a 8” cake pan or baking dish with parchment paper.

    2. In a bowl, whisk flour, chocolate protein powder, unflavored protein powder, coconut flour, cocoa powder and baking soda.

    3. In a large bowl, whisk together hot water, applesauce, butter, lemon juice and vanilla.

    4. Add dry mix to wet, and gently fold until just combined.

      DO NOT OVER-MIX or protein powder will make the cake dense.

    5. Pour batter into pan, bake for 22-25 minutes.

      A tester inserted into the center should come out clean but moist.

    6. Let cool for 10 minutes, transfer to cooling rack to cool completely.

    Chocolate Frosting:

    1. In a bowl, mix Greek yogurt, chocolate protein powder, cocoa powder until smooth.

    2. Spread on cooled cake.

    Marshmallow Top:

    1. In a bowl, combine Greek yogurt, marshmallow fluff and vanilla protein powder.

      Fold until combined.

    2. Spread on top of chocolate frosting.

    3. Top with mini marshmallows and a sprinkle of cinnamon.

    4. Place in fridge 1 hour and cut into 8 slices.
