Chocolate Pecan Pie Protein Bars - Great Healthy Treat

    Healthy Chocolate Pecan Pie Protein Bars with a low-fat graham base and sugar-free chocolate pecan filling. Chocolate pecan bars have no sugar and no butter, and are great for your next holiday party.

    Crust:

    Crust:

    1. Preheat oven to 375°F, line an 8x8” baking pan with parchment paper.

    2. In a food processor, combine crackers, almond butter and maple syrup until crumbly.

    3. Transfer mix to a bowl, add egg whites and mix to thicken.

    4. Spread on bottom of pan and press down firmly with back of spoon or small spatula.

    5. Bake for 10-12 minutes, remove from oven and let cool completely.

    Chocolate Pecan Pie Filling:

    1. In a bowl combine chocolate protein powder, cocoa powder, flour, coconut flour, stevia powder and baking soda.

    2. In another bowl, place whisk applesauce, egg, egg white and vanilla extract.

    3. Add dry mix into wet and gently fold until uniform.

    4. Add most of chopped pecans and mix again.

    5. Pour batter into pan, spread evenly with a spatula or back of a spoon.

      Top with remaining pecans.

    6. Bake for 12-15 minutes, a toothpick inserted into the center should come out with few crumbs attached.

      Allow to cool completely, about 30 minutes.

    7. Lift out of pan, place on cutting board and using a sharp knife, slice into 16 bars.
