Chocolate Stuffed Protein Churro Bites - Healthy and Easy

    Incredible Chocolate stuffed Protein Churro Bites with just 4 ingredients, and easy! These churro inspired baked protein balls are stuffed with sugar free chocolate and coated with monk fruit cinnamon-sugar for a healthy, high protein dessert.

    Coating:

    1. Preheat oven to 350°F and line a baking tray with parchment paper.

    2. In a large bowl, combine oat flour, vanilla protein powder, and baking powder.

    3. Add yogurt and mix until combined to form a dough ball; Stop as soon as ball forms.

      DO NOT OVER-MIX or the protein powder will make it tough.

    4. Wet your palms, divide dough into 6 pieces (1-2 Tbsp size) and roll into balls.

    5. Press a depression, place ~3 chocolate chips in the middle and cover. Roll into ball again.

    6. Place on prepared baking sheet; Bake 10-12 minutes until outside is slightly browned and looks cooked.

    Coating:

    1. Mix sugar alternative and cinnamon in a shallow bowl.

    2. When bites are warm, lightly spray with butter spray and roll in mixture.
