Cookie Crisp Protein Cereal - Mini but Powerful!

    Cute but loaded Cookie Crisp Protein Cereal for a protein packed homemade breakfast cereal alternative. Mini protein cookies cereal is made with protein powder and oat flour, and has a Keto and vegan option too.

    1. Preheat oven to 350°F, and line baking sheet with parchment paper.

    2. In a bowl, combine cookie ingredients - oat flour, vanilla protein powder, unflavored protein powder, baking powder and tahini.

      Add water - a little at a time - to form dough. It should be soft, only a little sticky. Still handleable.

    3. Fold in chocolate chips.

      Do not over-mix.

    4. Scoop about ½ Tbsp dough at a time and divide into 15 parts. Use slightly wet fingers and palms.

    5. Roll into balls, place on lined baking sheet, and and flatten.

    6. Bake for 12-15 minutes.

    7. Let cool completely, about 10 minutes (move to cooling rack to speed up process).
