    Blissfully Healthy Lemon Ricotta Dessert is perfect for Spring! Protein Lemon Ricotta Trifle is Low sugar, low fat and high protein.

    1. Place ricotta in a bowl and whisk with a wire whisk or hand mixer (or use a small food processor) until light and airy; About 30-45 seconds.

      Add Greek yogurt and beat again.

      Add protein powder and beat again.

    2. In a bowl, mix Greek yogurt, protein powder, lemon flavor instant pudding, and milk until smooth.

      Add milk a little at a time until pudding consistency is reached.

    3. Crush the graham cracker.

    4. Assemble in a jar with layers:

      Crushed graham cracker, lemon pudding, ricotta mix, lemon pudding, ricotta mix.

    5. Chill in the fridge about 30 minutes.
