Pancake Mix Protein Donuts - Easy 5 Ingredient Recipe

    Easy and fluffy Pancake Mix Protein Donuts with 5 ingredients and double protein from protein powder and Greek yogurt. Baked high protein pancake donuts are great for a healthy dessert, breakfast and post workout treat.

    Chocolate Glaze:

    1. Preheat oven to 350°F and spray a 8-cavity donut pan with cooking spray to grease.

    2. In a large bowl, whisk together pancake mix and protein powder.

    3. Add in Milk, Greek yogurt and egg, and whisk until JUST combined.

      Don’t over-mix or donuts will be dense.

      Batter should be fairly thick; Add 1-2 Tbsp water if it’s too thick, or 1 Tbsp more pancake mix if it’s too runny.

    4. Divide the batter among donut pan cavities, about ⅔ way to the top.

    5. Bake for 13-15 minutes. A toothpick inserted into center should come out dry.

    6. Cool for 5 minutes, then remove from pan. Transfer to a wire rack to cool completely.

    Chocolate Glaze:

    1. Place chopped chocolate chips and coconut oil in a large microwave safe bowl and microwave about 45 seconds, stirring halfway, until completely melted.

      Allow to cool slightly.

    2. Dip rounded side of donut into chocolate and place (chocolate-side up) on a cooling rack to dry out.
