Peanut Butter Chocolate Collagen Bars

    Amazingly fudgy Peanut Butter Chocolate Collagen Bars that are actually healthy! These chocolate collagen protein bars use a ton of collagen powder and egg whites and are sweetened with monkfruit; No sugar!

    Peanut Butter Layer:

    1. Preheat oven to 350°F and line an 8” x 8” brownie pan or baking dish with parchment paper.

    2. In a bowl, whisk collagen powder, unsweetened cocoa powder, Lakanto’s Golden Sweetener, flour, coconut flour and baking soda.

    3. In a large bowl, whisk together Peanut butter, almond milk, Greek yogurt, egg whites and vanilla.

    4. Add dry mix to wet, and gently fold until combined. Batter should be slightly runny.

    5. Transfer batter into pan, smoothen with a spatula or back of spoon.

    6. Bake for 25-30 minutes.

      Top should be set and toothpick inserted into the center should come out mostly dry.

    7. Remove from oven and let cool completely.

    Peanut Butter Layer:

    1. LET BOTTOM LAYER COOL FIRST.

    2. Mix peanut butter powder and vanilla protein powder in a bowl.

    3. Add peanut butter and maple syrup, then water (little a time) and mix.

      Add water if too thick, protein powder if too thin.

      Mixture should be like a dough, but spreadable.

    4. Take a little of the mixture at a time, and spread over bottom layer.

    5. Optionally top with chopped peanuts.

      Slice into bars and enjoy.
