Protein Cornbread Muffins - Sweet, Savory and Beautiful

    Cornbread Protein Muffins offer the perfect blend of classic comfort and high-protein nutrition. Low in sugar and fat and moist with a sweet-savory flavor, they’re ideal as a snack, side dish, quick breakfast, or post-workout treat.

    1. Preheat oven to 375°F and line 12 cups of a muffin pan with cupcake liners, and lightly spray insides with cooking spray (or use non-stick pan).

    2. In a large bowl, combine cornmeal, flour, vanilla protein powder, unflavored protein powder and baking powder.

    3. In another bowl, whisk together applesauce, almond milk, eggs and melted.

    4. Pour wet mix into dry, and gently fold until combined.

      DO NOT OVER-MIX or this will make dense cornbread.

    5. Divide the batter among muffin cups, filling about ⅔ way to the top

    6. Pour mixture into prepared pan and bake 18-20 minutes or until a toothpick inserted into center comes out with dry (or few crumbs)
