High Protein Strawberry Baked Oatmeal for One

    A high protein Strawberry Baked Oatmeal for One sweetened with protein powder for a healthy breakfast recipe. Made creamy with greek yogurt, this strawberry protein baked oats tastes just like a strawberries and cream dessert!

    1. Preheat the oven to 350°F and lightly grease a ramekin or oven-safe dish (cooking spray or oil)

    2. Place all ingredients except strawberries - oats, Greek yogurt, protein powder, almond milk and baking powder - in a small food processor or blender and process until blended - about 30 seconds.

      Fold in most of the strawberries, reserving a few for the top.

    3. Pour mixture into the ramekin/dish and top with remaining strawberries.

    4. Bake for 22-25 minutes. The top will be slightly wet in the middle, but that’s expected. Cooking longer will make the oats dry on the inside.

    5. Let cool a few minutes, sprinkle on toppings and dig in!
