Protein Strawberry Crunch Cake - Healthy, Single Serve

    A pretty amazing Protein Strawberry Crunch Cake for a healthy single serving dessert! This strawberry protein mug cake has a no bake strawberry crunch crumble topping and is low carb, gluten free and has no added sugar!

    Topping:

    1. Preheat oven to 350°F and lightly grease a 1 cup ramekin.

    2. In a blender, combine strawberry and almond milk until pureed.

    3. In a bowl, whisk vanilla protein powder, unflavored protein powder, coconut flour and baking powder.

    4. Add pureed strawberry, egg white, maple syrup and vanilla, and stir until combined. Batter should be smooth and thick.

    5. Taste batter and add sweetener if needed.

    6. Pour batter into ramekin, bake for 15-17 minutes.

    7. Top should be set.

    8. Let cool.

    Topping:

    1. Crumble freeze dried strawberries and cornflakes cereal into a small bowl.

    2. Add melted butter and mix

    3. Remove cake onto plate, and top with strawberry mixture.
