Pumpkin Protein Brownies - Unique Swirl and Flavor

    Perfect Pumpkin Protein Brownies with a protein pumpkin cheesecake swirl! These healthy pumpkin protein powder brownies are rich in chocolate and pumpkin spice flavor, but low calorie and sugar free!

    Wet Ingredients:

    Pumpkin Swirl:

    1. Preheat oven to 350°F and line an 8” x 8” brownie pan or baking dish with parchment paper.

    2. In a large bowl, whisk pumpkin puree, greek yogurt, milk, nut butter and vanilla extract.

    3. In another bowl, whisk cocoa powder, chocolate protein powder(s), unflavored protein powder, flour, stevia sweetener, pumpkin pie spice, baking powder and baking soda.

    4. Add wet mix to dry, and gently fold until just combined.

      DO NOT OVER-MIX or protein powder will make the brownie dense.

    Pumpkin Swirl:

    1. In a bowl, stir softened cream cheese, Greek yogurt and pumpkin puree.

    2. Add in egg white and mix.

    3. Add protein powder, flour and pumpkin spice and mix.

    Assemble and Bake:

    1. Transfer ½ batter into pan, spread and smoothen.

      Spread ⅔ pumpkin mix and cover brownie batter.

      Top with rest of the brownie batter and spread to cover.

      Add tablespoons worth of pumpkin mix and swirl into a pattern.

    2. Bake for 27-30 minutes. Toothpick inserted into the center should come out mostly dry.

      Remove from oven and let cool completely.

    3. Cut into slices and enjoy!
