Samoa Protein Balls - Healthy, Easy, Sugar-free

    Samoa Protein Balls for a healthy snack to satisfy cravings of Girl Scouts Samoa Cookies. Samoa cookie protein bites are gluten free, low carb, low sugar and low fat too!

    Coating:

    1. In a bowl, mix oat flour, vanilla protein powder, unflavored protein powder, coconut flour and almond butter powder.

    2. Add cashew butter and almond milk (little at a time) and mix.

      Add more milk if the mix is too dry or coconut flour if the mix is too wet.

    3. Divide into 8 portions.

      Roll into balls.

    Coating:

    1. Spread shredded coconut on a baking sheet and broil for about 3-4 minutes until lightly browned and toasted.

      Roll balls in coconut and set aside.

    2. Place the chopped chocolate and coconut oil in a bowl and microwave for about 20-30 seconds - at 15 second intervals - until it’s completely melted.

      Drizzle on balls.
