Spinach Protein Muffins

    Easy and healthy Spinach Protein Muffins for a nutritious breakfast or post workout treat. These green smoothie muffins recipe uses protein powder, Greek yogurt and applesauce, and has no oil or butter!

    Topping:

    1. Preheat oven to 350°F, line 12 cups of a muffin pan with cupcake liners, and lightly spray insides with cooking spray (or use non-stick pan).

    2. In a blender, combine spinach, yogurt, milk and eggs.

      Blend until smooth

    3. Transfer to a large bowl, add applesauce and vanilla, and whisk.

    4. In another bowl, whisk whole wheat pastry flour, vanilla protein powder, unflavored protein powder, stevia sweetener, cinnamon and baking powder.

    5. Add dry mix to wet, and gently fold until combined. DO NOT OVER-MIX or protein powder and gluten will from wheat flour will make the muffins dense.

    6. Divide batter among muffin cups.

    7. Bake for 23-25 minutes.

      A toothpick inserted should come out dry.

      Top with white chocolate chips.

    8. Cool for 5 minutes, then remove from pan.
