Valentine’s Day Protein Cookies - Simple Romantic Treat!

    Extra love for Valentine’s Day Protein Cookies - healthy, low fat PB blossom cookie with V-day themed peanut butter, monkfruit and freeze dried strawberry coating, Hershey’s Kiss on top!

    1. Preheat oven to 350°F and line baking sheet with parchment paper.

    2. In a small bowl, combine flaxseed meal and water and let rest 5 minutes.

    3. In a bowl combine flour, vanilla protein powder, peanut butter protein powder, peanut butter powder and baking powder.

    4. Add in flaxseed mixture, applesauce, peanut butter and almond milk (little at a time) and mix to form dough.

    5. Divide into 12 portions and roll into balls - about 1” wide.

    6. In a bowl, combine granulated sugar alternative, and crushed freeze-dried strawberries.

      Roll cookies in mixture and place on baking sheet (about 2” apart).

    7. Bake for 6 minutes until lightly browned.

    8. Immediately press 1 Hershey’s kisses chocolate in center of each cookie (cookie will crack around the edges).

    9. Transfer from cookie sheet to cooling rack to cool.
