Twix Protein Cookies - Copycat Crumbl but Healthy & Gluten Free

Beautiful Crumbl inspired Twix Protein Cookies made with a vegan and gluten free cookie, peanut butter protein caramel and sugar free chocolate. A copycat Crumbl Twix cookie at home, but healthy and high protein!
Peanut Butter Protein Caramel:
Chocolate Topping:
Preheat oven to 350°F, and line baking sheet with parchment paper.
In a bowl, combine cookie ingredients - oat flour, protein powder, tahini and almond milk - and mix to form a dough.
Divide dough into 4 parts, roll into balls, and flatten into cookies (about ⅓-½” thick, 2½” wide).
Use fingers to press down in the middle to make shallow depression about half the cookie width.
Place on parchment lined sheet and bake for 10 minutes.
Let cool completely, about 15 minutes (move to cooling rack to speed up process).
Protein PB Caramel:
In a bowl, stir peanut butter powder, protein powder and water until combined.
Chocolate Topping:
Place the chocolate chips and coconut oil in a microwave safe bowl and microwave at 20 second intervals, stirring - for about 45 seconds until completely melted.
Let cool.
Assemble:
Once cookies are completely cool, spoon caramel mixture in middle of cooke and spread. Top with melted chocolate.
