Spiced Chickpea Lettuce Cups are perfect for a fiber-packed quick lunch, especially one on-the-go. 10 minutes is all you need for this Vegan and Gluten-free sandwich alternative.

Drain the chickpeas but don’t let them get too dry.
Transfer to a bowl a large bowl and warm in a microwave for about 30 seconds.
In a small bowl, combine the spices to mix evenly.
Add spices to chickpeas and toss to coat evenly.
Divide lettuce leaves in 2’s placing them on top of each other to make 6 cups.
Spoon out chickpeas, dividing equally, onto lettuce leaves and top with sliced onions and cucumber.
Squeeze some lemon juice on the top if desired, and serve!
